Its name comes from a wooden carving in the nearby Thistle Chapel — and that same sense of Old Town character runs through everything. Inside a beautifully preserved 17th-century building, stone walls and soft contemporary lighting frame a menu built entirely around Scotland's natural larder: hand-dived scallops, venison loin, North Sea halibut, and the much-loved haggis bon bons with whisky sauce.
